Marzolino is an Tuscan cheese traditionally made only from sheep's milk. The rind is washed with tomato juice, which gives Marzolino Rosso it's name-- "rosso" means red in Italian. An interesting fact about this sheep cheese is that in the past (and occasionally today) the rennet was replaced with vegetable rennet, from the juice wild artichokes. Organoleptic properties Aspect and texture: soft, compact, yellow paste with a few tiny holes. Rind treated with tomato juice. Taste: sweet and fresh with traces of sheep’s milk.
