Nero Imperiale (Imperial Black) is a new entry on the scene of Italian cheeses. Nero Imperiale is a cow's milk cheese characterized by an intense flavor and aroma, due to the meticulous and long aging period in underground cellars. The cheese is aged on planks of pine wood and rubbed with IGP Balsamic Vinegar of Modena. True to its name, Nero's outside is rubbed in ash, resulting in a black rind with an interior that is ivory white. Nero Imperiale offers great contrasts in flavor, giving rise to an extremely balanced cheese: on the one hand the sweet and sour taste of vinegar, on the other hand the milky flavor of the paste with a typical hint of acidity. It is an eclectic cheese, perfect if served with salads, on its own as an appetizer or to add flavor to pasta dishes or risottos and red meat.
