Quartirolo Lombardo

Quartirolo is similar to ‘Taleggio’ although it is made from skimmed milk. Like Taleggio, Quartirolo Lombardo is a washed rind, cow's milk cheese made in the Northern Italian region of Lombardy. And like most Italian cheese, it boasts a rich history: ‘Quartirolo’ means ‘made with the fourth grass’ and refers to the grass grown after the third hay cutting at the beginning of the autumn. This artisan cheese was traditionally made with the milk from cows feeding on this "fourth grass", which was thought to give more flavor to the cheese. Quartirolo was declared a Italian DOP cheese in 1993. Organoleptic properties Aspect and texture: compact, ivory paste, with a washed rind and very few holes. Taste: fresh and sharp with more aromatic flavors when ripened. Serving suggestions White wines and beer. Green tomato chutney, aubergine preserve. Fresh fruit, soft bread and rolls.
