Jeune Autize

Jeune Autize is an artisanal French cheese produced entirely from goat's milk. The cheese is named after the small river which bisects the town where it is produced. This washed rind cheese is a part of a new European movement that pays tribute to traditional French dairy methods while exploring altogether new styles of cheese. Very similar to Morbier, Jeune Autize is layered with a vegetable ash vein which cuts the white paste of each wheel, another reference to the town's river. Unlike Morbier however, Jeune Autize is sweet and light in flavor. The interior of the cheese is white and blue (from the ash) and contrasts with the auburn washed rind. Jeune Autize is aged by the famed cheese affineur Rodolphe le Meunier, who was awarded with the MOF recognition (Meilleur Ouvrier de France). Organoleptic properties Aspect and texture: white paste with ash vein that runs through center. Vein often “bleeds” into paste, giving the cheese an almost blue like appearance. The wheels are washed in brine, aging to a bright orange color. The wheels also have hatch marks on both sides Serving suggestions A sparkling wine or crisp white. Pairs well with apricots.
