Galet Du Cher

Galet du Cher is a puck shaped goat cheese made in the Loire Valley, an area of France famous for its cheese. Very similar to a Selle sur Cher, the Galet du Cher is a traditional French goat cheese rubbed with vegetable ash. This process gives a grayish-blue hue to the surface of the cheese which contrasts gorgeously with the stark white of the interior paste. The clean flavor of the soft cheese is enriched by notes of grass. Organoleptic properties Aspect and texture: ash ripened, geotrichum rind. Ash develops a bluish-grey coloring. Paste is stark white with a dense texture in the center but developing a creamier paste closest to the rind. Taste: bright and lactic. Serving suggestions Pairs nicely with dry sparkling wines as well as a crisp rose.
