Brie L'original Paysan Breton

Though made by one of the larger Brie producers in France, this Brie goes back to its traditional roots. Most commercial Brie is stabilized, meaning it is made with a lot of rennet to help it set quickly. This more traditional Brie is known as "lactic" which uses less rennet and takes longer time to mature. This all amounts to a cheese that ripens beautifully with a silky, creamy yet supple paste and a full, mushroomy flavor. We may never be able to find AOC Brie in the US but, with age, this one comes very, very close. Full flavored and robust, this is the Brie we've been looking for on this side of the pond. Organoleptic characteristics Aspect and texture: bloomy rind with off-white velvety, melting interior Taste: full flavored and rich with hints of mushrooms and cream Serving suggestions Fruity red Burgundy, Beaujolais or Champagne Ingredients Cow's milk, traditional rennet, culture, salt
