Black Butte Reserve

Black Butte Reserve is the masterpiece of Pedrozo Dairy & Cheese Co. This farmstead cheese is produced only in Spring when the pastures are in full bloom. It is a raw milk cheese, aged for a minimum of six months. Black Butte Reserve has a strong, nutty bite and and an intense flavor of lush spring foliage. Tim Pedrozo is a third generation dairy farmer who in 1996 decided to buy some Holstein and Jersey cows with his wife Jill. His animals grew up free in the family's pastures but after a couple of years Tim understood that milk production alone was not sustainable enough. So he decided to move with his family and his 50 cows to Orland, a town situated in the Sacramento Valley. There, the couple learned to produce Gouda-style cheese from the old owner of the farm and started the Pedrozo Dairy & Cheese Company. In a short time they started to produce delicious original Californian cheeses. Tim's commitment to sustainable agriculture and responsible stewardship is remarkable and, together with the natural and healthy diet of the cows, contributes to make high quality dairy products and marvelous raw milk cheeses.
