Very similar to Ricotta Salata, this Ricotta Stagionata cheese, means "aged Ricotta" in Italian. It is produced using the whey left over from making their other sheep's milk cheese, Pecorino di Filiano. This aged Ricotta cheese is a salted, hard ricotta that is often grated on food instead of Parmesan. Ricotta stagionata is also excellent eaten as is!
