Tomme De Fontenay

This delicious French goat cheese comes from the Pays de la Loire and its rind is enriched by a blend of herbes de Provence, pepper corns, juniper berries and red peppers, very similar to the blend which covers the Corsican cheese Fleur du Maquis. Tomme de Fontanay is first aged for 2 to 3 months, then a blend of herbs is added to the rind and the cheese is aged for one more month. Tomme de Fontanay is aged by the famed cheese affineur Rodolphe le Meunier. Thanks to his meticulous care, the final result is a toothsome creamy cheese. The flavors of the herb coating permeate the semi-firm cheese without overwhelming the delicate nature of its interior. The final product is an exquisite cheese with a rich and perfectly balanced, herbacious flavor. Organoleptic properties Aspect and texture: semi firm. Taste: creamy, lactic and herbacious. Serving suggestions This cheese can stand on its own, but pairs with a crusty sweet baguette, red or green grapes, or dried cherries.
