 This small Toma is an example of the high quality cheeses the Sarales' dairy produces today: made from a blend of sheep and cow's milk, the mild cheese is enriched with delicious Italian black truffles, hence the name Toma Trifulera. The final product is a luxurious soft cheese with heady flavorful perfumes. During cheese-making, the young cheese wheels are salted and then placed on cheesecloth so that the natural fibers absorb the excess moisture expelled from the cheese. Finally, the wheels are aged for a short period.
