In 1996 Tim Pedrozo and his wife Jill bought a small herd of Holstein and Jersey cows and started the Pedrozo Dairy & Cheese Company. Making Gouda-style cheese out of raw, grass-fed milk, then they havedeveloped their own style, producing true California artisan cheeses. Their commitment to sustainable agriculture and responsible stewardship is evident in their fine products, one of which is Tipsy Cow, a semi-firm cheese made from the Pedrozos' raw Jersey milk. What makes Tipsy Cow special is that it is aged in Petite Sirah wine from the Sierra Foothills. The wine gives the rind a deep purple color and the cheese a robust, fruity flavor, with just a hint of a tannic bite on the finish.
