Tim Pedrozo is a third generation dairy farmer who bought a small herd of Holstein and Jersey cows with his wife in 1996. They allowed their animals to graze freely in their pastures but found that a farm only based solely on fluid milk production was economically unsustainable. The Pedrozos decided to move to the Sacramento Valley and begin making cheese. Such was the beginning of Pedrozo Dairy & Cheese Company. Sensibus is pleased to partner with Pedrozo Dairy to bring you their wonderful cheeses, for example Tartufello cheese. The cheese-making process of Tartufello starts when Tim Pedrozo milks his herd. When the curd is forming he adds black truffles and after about 60 days of aging, the result is a semi-firm cheese enriched with flecks of truffles. The flavor is perfectly balanced between the herbaceous notes of the cheese paste and the pungent taste of truffles. Organoleptic properties Aspect and texture: natural yellow rind formed by brining.
