Stracchino di Vedeseta is the king of the Taleggios. Made in the same region, and presenting a very similar look, what sets this cheese apart from its more famous counterpart is the fact that it's still produced following the traditional cheese-making process. Using the raw milk immediately after milking, and without any added cultures, this cheese is immediately produced at body temperature. The result is a square, washed-rind cheese with all the complexity and grassiness of the intact milk. Stracchino has a sweet and tangy taste, characterized by the earthy notes typical of raw milk cheeses.
