Tim Pedrozo is a third generation dairy farmer who in 1996 started the Pedrozo Dairy & Cheese Company. After learning to produce Gouda-style cheeses from the farm former's owner, the Pedrozos developed their personal style and today they make some wonderful California artisan cheeses, always committed to sustainable agriculture and responsible stewardship. The health of their cows is what allows them to produce raw milk cheeses with a unique robust flavor. One of them is Stout Cow which is regularly washed with Sierra Nevada Stout during the two month aging process. This allows the cheese to gain light, fruity notes, and after a certain time, the taste and aroma of fresh baked bread, chocolate and mocha.
