Scharfe Maxx

Scharfe Maxx is a masterpiece among Swiss cheeses, hailing from the Studer dairy in northeastern Switzerland. The dairy began by producing Emmenthaler and later, Appenzeller, but more recently began making Scharfe Maxx as its proprietary cheese. Scharfe Maxx is made from thermalized whole cow's milk with a touch of added fresh cream. This Swiss hard cheese keeps all the grassy, complex flavors of the milk and a lush, creamy texture. During the six month aging, the wheels are regularly washed with brine and herbs, which adds complexity to the finished product and gives the cheese the savory, sharp (or "scharfe" in German) flavor it's named for.
