It is a washed rind cheese, comparable to Quartirolo - one might also describe this cheese as a buffalo milk taleggio! Its texture is rich and fudgy and its flavor calls to mind toasted nuts and earth. Quadro di Bufala is ripened for a period of 35 to 40 days. Buffalo milk is known for being fruity in flavor and easy to digest compared with cow's milk. Traditionally used solely in the production of Mozzarella Di Bufala, some dairies have begun using this exquisite milk to make other types of cheeses, and the results are just astounding.
