Pienza is a fourteenth century town near Siena where this special full fat sheep’s milk is masterfully produced. The version we procure is a black rind cheese, a purely stylish addition. The milk used to produce this excellent Pecorino cheese is collected from local sheep bred in Val d'Orcia, an area in the bucolic rolling hills of the Crete Senesi. The result is a sweet and refined cheese with nutty notes that pairs perfectly with white wines, marmalade and honey.
