Parmigiano Reggiano Vacche Rosse (Red Cow Parmigiano) is the finest, oldest and rarest of parmigiano cheeses. The milk of cows of Breed Red Reggiano has some quality features that make it quite different from traditional Parmigiano. Originally, Parmigiano was produced only from the milk of the Pezzato Rossa cows, a breed which arrived from Switzerland in the 15th century. This milk was so rich in butterfat that the Parmesan cheese was absolutely exquisite, fruity and robust. Yet, the Pezzato Rossa cows gave only a small quantity of milk, therefore they were replaced with the higher-yielding Fresians cows producing. After World War II, the Pezzato Rossa was nearly extinct but then, thanks to some dedicated farmers and organizations like Slow Food, the breed survived and today the Parmigiano Reggiano is made from their milk once again. Hence, the cheese's name Vacche Rosse, or Red Cow. In particular in the Vacche Rosse milk there is a variation of the casein, which guarantees a better preparation of the cheese to the long maturation, resulting in a better digestibility. For this reason the Parmigiano Reggiano Vacche Rosse production regulation states that the product can be marketed exclusively after a minimum of 24 months of aging, against the 12 months maturing period of the traditional Parmigiano Reggiano. The result is a cheese that despite the long curing, maintains a sweet, delicate and persistent flavor. Furthermore, also the organoleptic properties are different: it has a typical pale yellow color, a very elastic grain, an intense but also delicate aroma.
