Northern Gold

In 1996 Tim Pedrozo, a third-generation farmer, and his wife Jill bought some Holstein and Jersey cows with the idea to breed them free on their pastures and produce genuine raw cow's milk. Over the next two years the milk production resulted in a great economic burden. Therefore, the Pedrozos and their herd of 50 cows, moved to a farm they bought in the Sacramento Valley town of Orland and opened Pedrozo Dairy & Cheese Company. After learning to produce Gouda-style cheese from the former owner of the dairy, they developed their own style in the production of raw milk cheeses, always respecting their commitment to sustainable agriculture and responsible stewardship. The health of their cows and their natural diet allows to obtain a milk with robust flavors which characterize their cheeses. One of Pedrozo Dairy's most innovative cheeses is the Northern Gold. On the one hand this semi-firm cheese recalls clearly some elements of the original gouda-style cheese, on the other hand Northern Gold is a hearty cheese with its own character. Produced with 100% raw milk from pasture-grazed cows, Northern Gold cheese is aged from 3-6 months, a period during which the mild, buttery wheels of cheeses become robust, developing nutty notes and an assertive edge. Interior is compact, slightly flaky and palate coating with occasional eye structure Taste: slightly sharp yet creamy with notes of smoke, caramel and cream.
