Killeen Goat Gouda hails from a farm in Ireland, nestled in the corner of County Galway. Partners Marion and Haske have owned the farm since 1990 but it hasn't been until recently that they started making their own farmstead cheeses. Their heard of goats dine exclusively on homegrown barley and grasses, giving the milk used for the production of Killeen cheese a rich and fatty quality. The paste of this goat cheese is dense and a bit flaky where the flavors are sweet, almost candied. Notes of grass and flowers come through in the finish. Organoleptic properties Aspect and texture: plasticoat rind, orange in color with a firm, compact interior Taste: sweet and nutty with hints of flowers Serving suggestions Try Killen hard cheese on a slice of brown bread or with savory nuts.
