From Stockbeare Farm in North Devon, Devon Oke is based on a recipe that dates back to the 17th century. It is a full fat hard cheese based on a traditional 17th Century recipe. The farm, which sits in the shadow of Dartmoor National Park, is known for it's humid, rainy climate, making it perfect for growing grass and grazing cattle. The milkis sourced from local dairy farmers in the area, delivered overnight and pasteurized the next morning. Made with traditional animal rennet, the Devon Oke cheese is aged for 6-7 months in special aging rooms. When finished the cheese is nutty, buttery and slightly sharp.
