Cusie is one of Beppino Occelli's grand cheeses. The word "cusie" is the local expression for “that which there is”, in the Piemontese dialect. It means that, in order to produce this cheese, Occelli uses whatever type of milk is available at the moment of production. Always starting with a base of high-quality alpine cow's milk, the cheese can be combined with either goat milk or sheep milk making each batch of cheese unique. The Cusie is one of the best cheeses produced in the Occelli's dairy, truly a nutty and piquant wheel. Though delicious plain, this hard cheese has and unique treatment: the wheels of cheese are topped with dried fruit that has been soaked in grappa, the local brandy. The wheels are then aged for a period from 18 to 24 months. The sweet flavors of the fruit and aromatics of the grappa balance out the strong cheese giving it a sweet, fruity addition.
