Made on the Ashley Chase Estate in Somerset, England, the Cave Aged Cheddar Truckle pays homage to the centuries-old traditions of making cheddars in this region. Bandaged wrapped in muslin and aged in the depths of the caves of Wookey Hole, theses petite versions of cheddar are sharp and earthy, with hints of mustard seed and lanolin. Set on the coast on England, Dorset Cheese Farms overlooks the sweeping vistas of the Bristol Channel. It is here that their herds of cows graze on grasses which will later be used to make their signature Cave Aged Cheddar Truckle. Many of the cheeses coming from this region have been assigned a Protection Designation of Origin (PDO) status, which ensures that the cheeses are being made under strict guidelines and regulations. After the Truckles have been shaped and given their muslin wrap, they are transported to the caves of the famed Wookey Hole. These underground caverns create the perfect environment for aging the cheddars, keeping moisture and temperature levels at a constant.
