The Aged Brescianella is a washed-rind cow's milk cheese coming from Brescia, in the Northern Italian region of Lombardy. A fruity flavor and smooth, creamy paste characterize this artisan cheese. Deliciously full-flavored, this cheese boasts a bright orange rind characteristic of the B. linens bacteria that also gives washed rind cheeses their pungent smell. Aged Brescianella is similar to Taleggio, but unlike the famous raw milk cheese from the mountains, this washed rind comes from the plains and is made using pasteurized milk.
